Overnight oats never disappoint — they are so easy to whip up and taste amazing. These apple pie overnight oats will become your new favorite.
Mornings can be tough as it is, and then remembering to eat a nutritious breakfast just makes it more complicated. Breakfast can truly be one of the hardest meals of the day. Especially if you’re a parent, because most mornings are spent caring for the kids and getting them out the door. That leaves many of us running on coffee and stress all morning, and before you know it, we forget our own breakfast.
We’ve all probably heard this old phrase our whole lives: “Breakfast is the most important meal of the day.”
It's true: how you start your day determines how the rest of your day looks. You can be full of energy or in a slump all day. Calories, nutrition and protein are essential, especially at breakfast.
This is why I’m such a big fan of quick and easy breakfasts, especially ones you can prep ahead of time, like overnight oats. There are countless variations of overnight oats, but my favorite is the apple pie overnight oats, with a boost of elderberry. This recipe has me looking forward to breakfast again and fueling my body the way it should be.
Before we hop into the details of this tasty recipe, I want to share a bit about myself and what we do here at Elderberry Queen — just in case you’re new around here.

Instructions:
-
In a small saucepan, toss the apples together with the maple syrup and ground cinnamon, and heat over medium heat for about two minutes. Once they are soft, take them off the heat and set them aside.

In a mason jar, add the oats, milk, yogurt, raw honey, maple syrup, cinnamon, pumpkin pie spice and elderberry syrup and stir well until fully combined.
-
Then top with apples, place a lid over top, and refrigerate.
Voila! Now you have a yummy and flavorful breakfast awaiting you tomorrow morning. I love to make a couple of these jars at a time so I can have breakfast ready and prepped for a few days in a row, it really makes life a whole lot easier, especially when it comes to health.
